The Bottega del Cioccolato is a small business that specializes in making quality chocolate products. The intern assists with the complete production process, learning about the history of chocolate in Italian culture, how cocoa is cultivated, processed and marketed throughout the world and the range of products that can be created. The intern must have at least two 4-hour blocks of time available a week (i.e. 9:30-1:30 or 2:30-6:30), thereby concentrating a 40-hour internship into a 5-week period.
Language requisites: Intermediate to advanced Italian.

De Gustibus
The De Gustibus association was created to develop sustainable wine and food tourism projects, supporting small agricultural farmers, safeguarding and protecting the environment with thematic itineraries including bicycle, horse, and automobile excursions and by promoting traditional Italian agriculture. The student must be available to work two afternoons a week from 3:00-7:00 pm or mornings from 9:30-1:30.
Recommended for students of Hospitality Management.

Enoteca Alessi
Enoteca Alessi is one of the oldest wine shops in Florence located in the heart of the city. The intern will participate in organizing wine tastings and will acquire firsthand knowledge about Italian wines.

Enoteca Bonatti (Wine-Tasting Shop)
The Enoteca Bonatti, founded in 1934, is a wine-tasting shop renowned for its professionalism, customer service and quality wines. Every Thursday at 6:00 p.m. the shop organizes free tastings of Italian and international wines. The intern will learn about wine culture and product marketing. He/she will learn to acquire the vocabulary specific to the industry from the first phases of production (the cellar) to the final product (the bottle and its content), as well as how and when wine should be drunk responsibly. The intern must have at least 2-3 hours available one afternoon a week and be present at the tastings on Thursday evenings.

Gelateria Perche’ No!
Gelateria Perche’ No! is the oldest gelateria in Florence. It opened in 1939 in Via dei Tavolini, the heart of Florence’s historic district. Since its inception the shop has given primary importance to the quality and freshness of the ingredients used, conserving the tradition of homemade ice cream production and rediscovering recipes of past generations. The intern assists with the complete production process. The schedule is flexible.

Gelateria Procopio
Gelateria Procopio, located in Piazza dei Ciompi close to Santa Croce, is one of the most famous gelaterie in Florence. The shop produces quality gelato using fresh ingredients. The intern, who must be punctual, reliable and motivated, will assist the owner in making gelato and will learn firsthand about the ingredients and production techniques which go into making a quality product.
Language requisites: basic to intermediate Italian.

Marc De Grazia
Marc de Grazia Selections has been promoting fine Italian wines since 1980. The company represents over eighty small estates from fourteen Italian wine regions with a preference for autochthonous grape varieties such as: Sangiovese, Nebbiolo, Aglianico, Fiano, Greco, Verdicchio, Garganega, Nero d'Avola, to name a few. The company not only exports and markets Italian wines but works closely with the wine-makers in all phases of production. The intern will assist staff in the commercial branch of the firm.

Tuscany and Wine
Tuscany and Wine is an organization focused on promoting wine in Tuscany. It schedules regular wine tastings providing visitors with information on the history of wine in central Italy and recommending key areas to visit. The intern will assist the company’s owner in organizing tours and wine tastings.

Vestri Cioccolato
Vestri Cioccolato is a family owned and run producer of quality chocolate products with branches in Florence and Arezzo. The intern assists with the complete production process, including the preparation of gelato products using only natural ingredients. The internship familiarizes students with the cultivation and processing of cocoa beans, as well as with the value of chocolate in Italy’s gastronomic culture.
